I think we're all in agreement that the weekends are meant for long sleeps, too much alcohol and calorific consumption! It's fine though because we all work so hard throughout the week that come the weekend we deserve a treat or six right?! RIGHT! I'm not going to touch the sleep or alcohol parts because they are what they are ... beautiful ... BUT I can help with the calorific consumption part of the mix...
I was recently introduced to a mind blowing Eton mess concoction at a good friends, Jo Chaps dinner party a few weeks back. I am a major fan when it comes to cream laden puds but once scoffed I have the tendency to feel very bad about myself. Gone are those days thanks to Jo Jo AKA my Eton mess saviour! I'm feeling in a particularly spritely mood today so I'm going to share the secret ingredient with you all but shhhhhhhhhh don't tell everyone ... scrap the cream and swap for creme fraiche and passion fruit! Don't scrunch your nose, I promise it's delish and will rock your world. Here's how it's done...
Ingredients - serves 4
A tub of blueberries, blackberries, rasperberries/strawberries
x3 passion fruits
Creme fraiche
Few sprigs of mint
x2 meringue nests
A few cubes of the M&S chocolate and raspberry bar
Start by slicing the blueberries, blackberries, rasperberries/strawberries and place into a medium sized bowl. Take a new bowl and spoon out the creme fraiche whilst scooping out the passion fruit centres, pips and all! Mix together and try and resist a sneaky taste!
Tear up the mint and crumble the meringue nests and choc into little bite sized pieces. Add all ingredients (bar the chocolate and a dash of two of mint and meringue) to the sliced fruit bowl and mix together lightly. Take 4 bowls and dish up the heavenly mess and finish off with a sprinkling of mint, meringue and the chocolate pieces on top.
Serve to your guests and wait for the ohhing and ahhing. Super easy and practically fat free (the chocolate doesn't count!) You are welcome!
